Instructions
Part 1: Make the Homemade Components (Can be made in advance)
- To Make Pumpkin Pie Puree: In a small bowl, mix 1 can of pumpkin puree, ⅓ cup of brown sugar, and 1 teaspoon of cinnamon. Stir until well combined and smooth.
- To Make Cinnamon Simple Syrup: In a small saucepan, combine 1 cup of white sugar, 1 cup of water, 4-6 cinnamon sticks, and 1 teaspoon of vanilla bean paste. Bring to a light boil, then reduce heat and simmer for 10 minutes. Allow the syrup to cool completely before straining to remove the cinnamon sticks.
Part 2: Assemble the Cocktail
- Prepare Your Cocktail Glass: Pour a small amount of caramel sauce onto one small plate and dark brown sugar onto another. Gently dip the rim of a martini glass into the caramel, then dip the caramel-coated rim into the brown sugar until fully coated.
- Shake the Martini: Fill a cocktail shaker halfway with ice. Add the salted caramel vodka, Rumchata, pumpkin cream liqueur, homemade pumpkin pie puree, and homemade cinnamon simple syrup. Secure the lid tightly and shake vigorously for 10-15 seconds, until the outside of the shaker is frosty.
- Garnish and Serve: Strain the chilled mixture into your prepared glass. Add a dollop of whipped cream on top and finish with a light sprinkle of cinnamon powder. Serve immediately.
Notes
- Make Ahead: The homemade puree and simple syrup can be made ahead of time. Store the puree in an airtight container in the refrigerator for up to one week, and the syrup for up to two weeks.
- Chill Your Glass: For best results, chill your glass in the freezer for about 10 minutes before rimming. This helps the caramel and sugar set faster.
- Don’t Have Vanilla Bean Paste? You can substitute it with 1 teaspoon of pure vanilla extract in the simple syrup. Add the extract after the syrup has cooled.
